GEMFISH (REXEA SOLANDRI)
Description

Gemfish are closely related to barracouta, this predatory mid-water fish is long and slender, with silver smooth skin and large sharp teeth. Seasonal catch from November to June, most commonly in southern waters in the Canterbury Blight and off Westland at depths of 100 to 300 metres. Mainly caught inshore by trawling before they move to deeper waters in winter.

Storage and handling (recommendations)
Chilled Keep well chilled 0°C (32F). Product received whole should have fillets removed to retain fillet quality and shelf life.
Frozen Best stored at -18°C (0F) in supplied strapped cartons to avoid freezer burn / dehydration. Recommended cooking from frozen or semi frozen state.
