Description

Cardinalfish are deep-water fish that belong to the Apogonidae family of Cardinalfishes. Cardinals have large loose scales and their flesh has a darker layer immediately under the skin and a darker strip running along the centre of the fillet. This darker meat is easily removed by deep skinning and trimming. They have a torpedo shaped body with a forked tail, large eyes and large, downward sloping mouth.

Storage and handling (recommendations)
Chilled Keep well chilled 0°C (32F). Product received whole should have fillets removed to retain fillet quality and shelf life.
Frozen Best stored at -18°C (0F) in supplied strapped cartons to avoid freezer burn / dehydration. Recommended cooking from frozen or semi frozen state.
